- 4 buttery croissants, torn into pieces
- 8 oz cream cheese, softened
- 1 cup fresh blueberries
- 4 large eggs
- 1 cup milk
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1 tsp cinnamon
- Pinch of salt
- Blueberry sauce (for serving, optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the croissants by tearing them into bite-sized pieces and placing them in a greased 9×13 inch baking dish.
- Make the cream cheese mixture by beating the softened cream cheese until smooth, then mix in the sugar, vanilla extract, and pinch of salt.
- Add in the eggs and whisk until well combined, slowly pouring in the milk.
- Mix in the fresh blueberries gently to avoid smashing them.
- Combine the cream cheese mixture with the torn croissants in the baking dish.
- Sprinkle with cinnamon on top before baking.
- Bake for 30-35 minutes or until puffed and golden brown.
- Serve warm, optionally with powdered sugar and blueberry sauce.
Notes
You can assemble the casserole the night before and refrigerate it, adding extra baking time if baked cold. This recipe is flexible; try different berries or add nuts for variation.
