  • 2 tablespoons parsley leaves (finely chopped)
  • 2 tablespoons basil leaves (finely chopped)
  • 2 tablespoons Castelvetrano olives (chopped)
  • 2 tablespoons Kalamata olives (chopped)
  • 1 clove garlic (grated)
  • ½ teaspoon dried oregano
  • ¼ teaspoon flaky sea salt (or more to taste)
  • ¼ cup parmesan cheese (freshly grated)
  • Fresh warm bread (for serving)

Instructions

  1. Gather your ingredients: Lay everything out on your countertop.
  2. Prep your herbs and olives: Finely chop the parsley, basil, and both kinds of olives.
  3. Grate the garlic: Using a microplane or a fine grater, grate your clove of garlic.
  4. Combine the base ingredients: In a medium bowl, combine the olive oil, balsamic vinegar, grated garlic, chopped parsley, chopped basil, and both kinds of olives.
  5. Season it up: Sprinkle in the oregano and flaky sea salt. Adjust to your preference.
  6. Add the cheese: Stir in the freshly grated parmesan.
