Description

Delicious Blueberry Protein Pancakes that are perfect for a quick breakfast or post-workout treat. Fluffy, comforting, and energizing!

Ingredients

Scale
  • 1 cup Protein Pancake Mix
  • 1 cup Blueberries (fresh or frozen)
  • 1 Egg
  • Optional: Dash of cinnamon or splash of vanilla extract
  • Maple syrup, for serving
  • Greek yogurt or whipped cream, for serving

Instructions

  1. Preheat your non-stick griddle or frying pan over medium heat.
  2. Mix the protein pancake mix, egg, and gradually add milk to create a smooth, lumpy batter.
  3. Add the blueberries, folding them gently into the batter.
  4. Pour about a quarter cup of batter onto the hot griddle for each pancake, cooking until bubbles form.
  5. Flip and cook until golden brown, about 2-3 minutes on each side.
  6. Stack the pancakes on a warm plate and cover to keep warm while cooking the remaining batter.
  7. Serve with maple syrup, Greek yogurt, or whipped cream, and extra blueberries.

Notes

Let the batter rest for a few minutes before cooking for fluffier pancakes. Experiment with different add-ins like lemon zest or chocolate chips.
