Description

A refreshing and nutritious smoothie combining blueberries, avocado, and creamy yogurt with a hint of lemon.


Ingredients

  • 1 lemon (zest from whole, juice from half)
  • 2 cups almond milk, unsweetened (or other plant-based milk)
  • 2 cups blueberries, fresh or frozen
  • 1/2 cup avocado chunks, fresh or frozen
  • 1/2 cup plain Greek yogurt
  • 1 tsp vanilla extract
  • 2 Tbsp chia seeds
  • 1/4 tsp cinnamon
  • Ice, until desired temperature reached

Instructions

  1. Prep your ingredients by zesting the lemon and squeezing the juice from half.
  2. Load the blender with almond milk as a base.
  3. Toss in the blueberries and avocado chunks.
  4. Add Greek yogurt, lemon juice, and zest.
  5. Sprinkle in chia seeds and cinnamon.
  6. Blend on high for about 30-60 seconds until smooth and creamy.
  7. Adjust the texture by adding more almond milk or ice as needed.
  8. Pour the smoothie into a glass and garnish with whole blueberries or chia seeds.

Notes

You can store leftovers in the refrigerator for up to 24 hours; stir before enjoying for optimal taste.
