A delicious and cozy rhubarb crisp perfect for any occasion, combining tart rhubarb with a sweet, buttery topping.


Ingredients

  • 4 cups frozen rhubarb
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup butter, softened
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine the frozen rhubarb, sugar, cornstarch, vanilla extract, and a pinch of salt in a large mixing bowl.
  3. Mix gently until the rhubarb is evenly coated with the sugar and cornstarch mixture.
  4. Pour the rhubarb mixture into a greased 9×13 inch baking dish or deep pie dish.
  5. In the same bowl, combine rolled oats, flour, brown sugar, cinnamon, and salt.
  6. Add softened butter and mix until it resembles coarse crumbs.
  7. Sprinkle the crisp topping evenly over the rhubarb filling.
  8. Bake for about 40–45 minutes until bubbly and golden-brown.
  9. Cool for about 15-20 minutes before serving.
  10. Serve warm, preferably with ice cream or whipped cream.

Notes

For variations, consider mixing in strawberries or blueberries, or adding toasted coconut flakes or nuts to the topping.
