- 4 cups frozen rhubarb
- 1 cup sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup butter, softened
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 375°F (190°C).
- Combine the frozen rhubarb, sugar, cornstarch, vanilla extract, and a pinch of salt in a large mixing bowl.
- Mix gently until the rhubarb is evenly coated with the sugar and cornstarch mixture.
- Pour the rhubarb mixture into a greased 9×13 inch baking dish or deep pie dish.
- In the same bowl, combine rolled oats, flour, brown sugar, cinnamon, and salt.
- Add softened butter and mix until it resembles coarse crumbs.
- Sprinkle the crisp topping evenly over the rhubarb filling.
- Bake for about 40–45 minutes until bubbly and golden-brown.
- Cool for about 15-20 minutes before serving.
- Serve warm, preferably with ice cream or whipped cream.
Notes
For variations, consider mixing in strawberries or blueberries, or adding toasted coconut flakes or nuts to the topping.
