- 4 boneless, skinless chicken breasts
- 1 cup pineapple chunks
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 1/4 cup ketchup
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Prep your chicken by rinsing it under cold water and patting it dry.
- Make the sauce by combining soy sauce, brown sugar, ketchup, garlic, and ginger in a bowl.
- Add the pineapple chunks to the sauce mixture and stir.
- Pour the sauce over the chicken in the crock pot.
- Set the crock pot on low for 6-7 hours or high for 3-4 hours.
- Shred the chicken in the crock pot and let it soak in the sauce for an additional 15 minutes before serving.
