A delightful recipe for moist pumpkin bread, perfect for embracing the flavors of fall.
Ingredients

- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon pumpkin spice
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 cup pumpkin puree
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup chopped nuts (optional)
- 1/2 cup streusel topping
- 1/4 cup maple syrup (for glaze)
Instructions
- Preheat your oven to 350°F (175°C).
- Prep a 9×5 inch loaf pan by greasing or lining it.
- Mix the dry ingredients in a large bowl.
- Combine the granulated and brown sugars in another bowl.
- Add the wet ingredients to the sugar mixture and whisk until smooth.
- Combine wet and dry ingredients, folding gently.
- Add nuts if using, and stir gently.
- Prepare the streusel topping by mixing the ingredients until crumbly.
- Transfer the batter into the loaf pan and sprinkle with streusel.
- Bake for 60–70 minutes or until a toothpick comes out clean.
- Cool in the pan for 15 minutes before moving to a wire rack.
- Glaze with maple syrup before slicing.
Notes
For a gluten-free version, substitute all-purpose flour with a 1:1 gluten-free blend. Can also be made vegan by replacing eggs with flax eggs.
