Instructions
- Activate the Yeast: In a small bowl, combine the warm water and active dry yeast. Let it sit for about 5-10 minutes until it’s frothy.
- Mix the Dough: In a large bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Mix until forming a shaggy dough.
- Knead the Dough: Turn the dough onto a floured surface; knead for about 5-7 minutes until smooth and elastic.
- First Rise: Place the dough in a greased bowl, cover with a towel, and let it rise for 1-2 hours, until doubled in size.
- Shape the Focaccia: Punch down the dough, stretch it into a desired shape on a greased baking sheet, and use your fingertips to create dimples.
- Add the Flavors: Sprinkle thyme and Gruyere cheese on top, followed by a sprinkle of sea salt and a drizzle of olive oil.
- Second Rise: Cover and let it rise for an additional 30 minutes.
- Bake: Preheat the oven to 425°F (220°C) and bake for 20-25 minutes until golden brown.
- Cool and Serve: Let it cool on a wire rack before slicing.
