Ingredients
- Fresh Nectarines (about 4 cups sliced)
- Granulated Sugar (1 cup)
- Lemon Juice (2 tablespoons)
Instructions
- Prep the nectarines: Wash and slice the nectarines, removing the pit, but do not peel.
- Combine ingredients: In a sturdy pot, mix the sliced nectarines, sugar, and lemon juice and let it sit for about 30 minutes.
- Cook the jam: Place the pot over medium heat and bring the mixture to a gentle boil, stirring occasionally for 10-15 minutes until it thickens.
- Test for doneness: Conduct the “plate test” to ensure the jam holds its shape.
- Jar it up: Spoon the jam into sterilized jars, leaving about ¼ inch of headspace.
- Cool & store: Allow the jam to cool completely before sealing it and refrigerating.
Notes
This jam can last for about 2-3 weeks in the refrigerator. Experiment with flavors by adding spices or different citrus.
