  • 8 oz Mushrooms, sliced
  • 23 cups Beef Broth (low-sodium)
  • 1 cup Red Wine
  • 2 tablespoons Fresh Thyme
  • 2 Bay Leaves
  • Salt
  • Black Pepper

Instructions

  1. Prep the ingredients: Chop beef into 1-inch cubes and season with salt and pepper.
  2. Sear the beef: Heat olive oil in a pot, sear beef cubes until browned.
  3. Sauté the aromatics: Remove beef; add onions and sauté until translucent, then add garlic.
  4. Deglaze the pot: Pour in red wine and scrape the bottom.
  5. Add the vegetables: Combine carrots, mushrooms, and seared beef, adding thyme and bay leaves.
  6. Add broth and simmer: Pour broth to cover everything, bring to a boil, then simmer for 90-120 minutes.
  7. Finish and serve: Adjust seasonings, add cream if desired, and serve warm.

Notes

For a vegetarian version, swap beef with mushrooms or tempeh and use vegetable broth. Adding a bit of brown sugar can enhance flavor.
