- 2 Carrots, chopped
- 8 oz Mushrooms, sliced
- 2–3 cups Beef Broth (low-sodium)
- 1 cup Red Wine
- 2 tablespoons Fresh Thyme
- 2 Bay Leaves
- Salt
- Black Pepper
Instructions
- Prep the ingredients: Chop beef into 1-inch cubes and season with salt and pepper.
- Sear the beef: Heat olive oil in a pot, sear beef cubes until browned.
- Sauté the aromatics: Remove beef; add onions and sauté until translucent, then add garlic.
- Deglaze the pot: Pour in red wine and scrape the bottom.
- Add the vegetables: Combine carrots, mushrooms, and seared beef, adding thyme and bay leaves.
- Add broth and simmer: Pour broth to cover everything, bring to a boil, then simmer for 90-120 minutes.
- Finish and serve: Adjust seasonings, add cream if desired, and serve warm.
Notes
For a vegetarian version, swap beef with mushrooms or tempeh and use vegetable broth. Adding a bit of brown sugar can enhance flavor.
