Ingredients

- 1 Yellow Onion
- 3 Cloves Garlic
- 2 Tbsp Olive Oil
- Seasonal Vegetables (e.g., sweet potatoes, Brussels sprouts, kale, and butternut squash)
- Fresh Herbs (parsley, thyme, or sage)
- Salt and Black Pepper to taste
- Broth or Cream (Optional)
Instructions
- Preheat your oven to 425°F (220°C). Gather your ingredients and give those vegetables a good rinse.
- Chop your onion and garlic. Dice any hard vegetables like sweet potatoes or Brussels sprouts and season with olive oil, salt, and pepper.
- Roast the veggies on a baking sheet lined with parchment paper for 25-30 minutes, flipping halfway through.
- Cook your grain or protein; for quinoa, combine 1 cup with 2 cups of broth, bringing to a boil, then simmer for 15 minutes. For chicken or tofu, season and cook until done.
- Prepare a dressing by whisking olive oil, lemon juice, and salt and pepper.
- Assemble your bowl with a base of grains, roasted veggies, protein, and drizzle with dressing and fresh herbs.
Notes
Feel free to customize with leftover vegetables or different grains. Add nuts or seeds for crunch.
