- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 2 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 cups diced apples
- 1 cup caramel sauce
Instructions
- Preheat the oven to 325°F (163°C).
- Prepare the crust by mixing graham cracker crumbs, 1/4 cup sugar, and melted butter until resembling wet sand. Press into a 9×9 inch baking pan.
- Bake the crust for 10 minutes until lightly golden.
- Make the cheesecake filling by beating softened cream cheese until smooth. Gradually mix in sugar and vanilla, then add eggs one at a time.
- Add the diced apples, folding them gently into the mixture.
- Pour the cheesecake mixture over the baked crust and smooth it out.
- Swirl in half of the caramel sauce with a knife.
- Bake for 40-45 minutes until the center is just set.
- Chill completely at room temperature, then refrigerate for at least 4 hours.
- Serve chilled, drizzling with remaining caramel sauce.
Notes
For a vegan version, substitute cream cheese with a vegan alternative and use applesauce for eggs.
