Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups diced apples
  • 1 cup caramel sauce

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Prepare the crust by mixing graham cracker crumbs, 1/4 cup sugar, and melted butter until resembling wet sand. Press into a 9×9 inch baking pan.
  3. Bake the crust for 10 minutes until lightly golden.
  4. Make the cheesecake filling by beating softened cream cheese until smooth. Gradually mix in sugar and vanilla, then add eggs one at a time.
  5. Add the diced apples, folding them gently into the mixture.
  6. Pour the cheesecake mixture over the baked crust and smooth it out.
  7. Swirl in half of the caramel sauce with a knife.
  8. Bake for 40-45 minutes until the center is just set.
  9. Chill completely at room temperature, then refrigerate for at least 4 hours.
  10. Serve chilled, drizzling with remaining caramel sauce.

Notes

For a vegan version, substitute cream cheese with a vegan alternative and use applesauce for eggs.
