  • 1/4 cup butter or coconut oil, melted

Instructions

  1. Combine chia seeds and almond milk in a mixing bowl, whisk until seeds are evenly distributed.
  2. Add maple syrup and cinnamon, whisk to combine.
  3. Cover the bowl and refrigerate for at least 240 minutes or overnight.
  4. In a saucepan over medium heat, cook diced apples with a splash of water and a sprinkle of cinnamon for about 5–7 minutes.
  5. Mix oats, flour, brown sugar, and salt in a bowl, then stir in melted butter or coconut oil until crumbly.
  6. Preheat oven to 350°F (175°C) and bake crumble mixture for 10–15 minutes until golden brown.
  7. Layer pudding, warm apple mixture, and crumble topping in serving dishes.
  8. Serve with a dollop of whipped cream or maple syrup if desired.
