- 4 cups almond milk (or any milk of choice)
- 2 cups apples, peeled and diced
- 1/4 cup maple syrup (or honey)
- 1 teaspoon cinnamon
- 1/2 cup oats
- 1/2 cup flour
- 1/4 cup brown sugar
- 1/4 cup butter or coconut oil, melted
- Pinch of salt
Instructions
- Combine chia seeds and almond milk in a mixing bowl, whisk until seeds are evenly distributed.
- Add maple syrup and cinnamon, whisk to combine.
- Cover the bowl and refrigerate for at least 240 minutes or overnight.
- In a saucepan over medium heat, cook diced apples with a splash of water and a sprinkle of cinnamon for about 5–7 minutes.
- Mix oats, flour, brown sugar, and salt in a bowl, then stir in melted butter or coconut oil until crumbly.
- Preheat oven to 350°F (175°C) and bake crumble mixture for 10–15 minutes until golden brown.
- Layer pudding, warm apple mixture, and crumble topping in serving dishes.
- Serve with a dollop of whipped cream or maple syrup if desired.
