- 1 pre-made pie crust
- 1 cup strawberries, pureed
- 1 cup blueberries, pureed
- 1 cup vanilla yogurt
- 1/2 cup whipped cream
- 1/4 cup sugar
- 1 tablespoon lemon juice
Instructions
- Preheat your oven to 350°F (175°C). If you’re using a store-bought crust, place it in a pie dish and follow the package instructions. For homemade crust, roll it out and fit it into your pie dish, crimping the edges for a polished look. Bake for 10-12 minutes until golden brown, then let it cool completely.
- Combine the strawberries and 1 tablespoon of sugar in a blender or food processor. Blend until smooth, then set aside in a bowl. Repeat the process with the blueberries.
- Mix the yogurt, remaining sugar, and lemon juice in a mixing bowl, whisk until smooth and creamy.
- Fold the whipped cream into the yogurt mixture until fully combined.
- Spread half of the yogurt mixture evenly into the cooled pie crust. Drizzle half of the strawberry puree on top, then swirl using a knife or skewer. Repeat with the remaining mixtures.
- Refrigerate the pie for at least 2-3 hours or until set.
Notes
Serve with extra whipped cream and fresh seasonal berries. You can adjust the sweetness to taste and experiment with different fruit purees.
