- 1 pre-made pie crust
- 1 cup strawberries, pureed
- 1 cup blueberries, pureed
- 1 cup vanilla yogurt
- 1/2 cup whipped cream
- 1/4 cup sugar
- 1 tablespoon lemon juice
Instructions
- Prepare the Pie Crust: Preheat your oven to 350°F (175°C). Place the pie crust in a pie dish and bake for 10-12 minutes until golden brown. Let it cool completely.
- Puree the Fruits: In a blender, combine strawberries with 1 tablespoon of sugar and blend until smooth. Set aside, then repeat with blueberries.
- Mix the Base:In a mixing bowl, combine yogurt, remaining sugar, and lemon juice, whisking until smooth and creamy.
- Combine Whipped Cream: Gently fold whipped cream into the yogurt mixture until fully combined.
- Create the Swirl: Spread half of the yogurt mixture into the cooled pie crust. Drizzle half of the strawberry puree on top, swirling with a knife. Repeat with remaining ingredients.
- Chill: Refrigerate the pie for at least 2-3 hours or until set.
Notes
Serve with extra whipped cream and fresh berries. Variations include using mixed berries, chocolate drizzle, or making it dairy-free.
