- 1 tsp Baking soda
- 1/2 tsp Baking powder
- 1/2 tsp Salt
- 1 tsp Ground cinnamon
- 1/2 tsp Ground nutmeg (optional)
- 1/2 cup Vegetable oil or melted butter
- 1 cup Granulated sugar
- 2 large Eggs
- 1 tsp Vanilla extract
- 1 1/2 cups Grated zucchini (about 1–2 medium zucchini)
- 1/2 cup Chopped walnuts
- Optional: 1/2 cup raisins or chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment if desired.
- In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, beat together oil (or melted butter) and sugar until well combined.
- Add eggs one at a time, mixing after each addition, then stir in vanilla extract.
- Fold grated zucchini and chopped walnuts (and optional add‑ins) into the wet ingredients.
- Gradually stir the dry ingredients into the wet mixture, mixing just until combined—do not overmix.
- Pour batter into the prepared pan and smooth the top.
- Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then remove to a wire rack to cool completely before slicing.
Notes
- Do not squeeze excess moisture from the zucchini; the moisture helps keep the bread tender.
- Swap walnuts for pecans or sunflower seeds if preferred.
- For added flavor, stir in 1 tsp of lemon or orange zest.
- Serve warm with butter or cream cheese for extra richness.
- This bread freezes well—wrap slices individually and freeze up to 2 months.
