Description

Ingredients

  • 1 cup Pasta
  • 1 tbsp Oil
  • 34 Garlic cloves
  • 1 Onion
  • 1/3 cup Capsicum
  • 1/3 cup Carrot
  • 1/3 cup Boiled Sweet Corn
  • 2 tbsp Butter
  • 2 tsp All-Purpose Flour (Maida)
  • 2 cups Milk
  • 1/2 cup Cheese
  • 1 tsp Chili Flakes
  • 1 tsp Oregano
  • 1 tsp Black Pepper Powder
  • 1 tbsp Salt

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Toss in your pasta, and cook until al dente (8-10 minutes). Reserve a cup of pasta water before draining.
  2. Sauté the Veggies: Heat the oil in a large pan. Add onions and sauté until translucent (3-5 minutes). Add garlic and sauté for an additional minute. Then add capsicum, carrots, and sweet corn, cooking until tender (4-5 minutes).
  3. Make the Roux: Push the veggies to one side, adding butter to the cleared area. Once melted, whisk in flour to form a roux, cooking until golden (1-2 minutes).
  4. Coat with Creamy Goodness: Gradually pour in milk while whisking continuously. Season with salt, black pepper, oregano, and chili flakes as it thickens (about 5 minutes).
  5. Add Cheese & Combine: Stir in grated cheese until melted. Combine drained pasta with the sauce, adding reserved pasta water if needed.
  6. Plate and Serve: Adjust seasoning to taste. Serve hot, garnished with extra chili flakes and fresh herbs if available.
