2 whole wheat tortillas
4 tablespoons hummus
1 cup fresh spinach leaves
1 medium carrot, grated
½ cucumber, thinly sliced
½ red bell pepper, thinly sliced
½ avocado, sliced
8 cherry tomatoes, halved
1 tablespoon lemon juice
Salt, to taste
Black pepper, to taste

½ cup chickpeas, black beans, or baked tofu

Instructions
Wash and dry all produce. Slice cucumber, bell pepper, and tomatoes. Grate the carrot.
