Ingredients
Cooking spray
6 cups leftover stuffing
8 cups chopped leftover roasted turkey
4 cups leftover cooked vegetables (like green beans, carrots, corn, or Brussels sprouts)
1 ½ cups mayonnaise (or mix with ½ cup sour cream for extra tang)
6 cups leftover mashed potatoes
2 cups shredded sharp Cheddar cheese
¼ teaspoon ground paprika
Optional twist:
1 cup leftover cranberry sauce (swirled into the mashed potatoes or drizzled on top)
1 cup gravy (layered with the turkey or served on the side)
½ tsp garlic powder or a dash of hot sauce for added flavor
Instructions
Preheat oven to 375°F (190°C). Lightly grease two 9×13-inch baking dishes with cooking spray.
Press 3 cups of stuffing into the bottom of each dish to form a firm base layer.
In a large bowl, mix chopped turkey with mayonnaise (and sour cream if using), and spread evenly over the stuffing.
Layer on the cooked vegetables.
Top each dish with 3 cups of mashed potatoes, spreading to cover the filling completely.
Sprinkle 1 cup of Cheddar cheese over each casserole and dust lightly with paprika.
Bake uncovered for 30–35 minutes, until cheese is melted and the casserole is heated through.
Serve warm with a drizzle of gravy and a spoonful of cranberry sauce on the side (or right on top).
