- 2 large Boneless, skinless chicken breast, cut into 1-inch cubes
- 1 lb Twisted pasta (fusilli, penne, or rotini)
- 3 Tbsp Unsalted butter, divided
- 4–5 cloves Fresh garlic, minced
- 1 ½ cups Heavy cream
- ½ cup Chicken broth
- 1 cup Grated Parmesan cheese, freshly grated preferred
- 1 tsp Italian seasoning, divided
- ¼ tsp Red pepper flakes, optional
- Fine salt & black pepper, to taste
- 2 Tbsp Fresh parsley, chopped, for garnish
Instructions
- Cook the Pasta: Begin by boiling a large pot of salted water. Add in your twisted pasta and cook according to package directions until al dente. Be sure to reserve about a cup of pasta water before draining.
- Sear the Chicken: In a large skillet, melt 1 tablespoon of unsalted butter over medium-high heat. Add the cubed chicken breast, season with salt, pepper, and half of the Italian seasoning, and cook until golden brown, about 6-8 minutes.
- Make the Garlic Butter: Add the remaining 2 tablespoons of butter to the skillet, toss in the minced garlic, and sauté until fragrant, about 1 minute.
- Create the Sauce: Pour in the heavy cream and chicken broth, bring to a simmer, then stir in the remaining Italian seasoning and grated Parmesan cheese until melted and creamy.
- Combine the Ingredients: Add the cooked chicken back in and toss to coat in the sauce, adding red pepper flakes if desired.
- Toss with Pasta: Add drained pasta to the skillet and toss to coat with the creamy sauce.
- Garnish and Serve: Remove from heat, sprinkle with chopped parsley, and serve immediately.
Notes
This dish can be made ahead and stored in the fridge for up to 2 days. Reheat with a splash of cream or broth to restore consistency.
