- 1 cup cottage cheese
- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 2 eggs
- 1/4 cup honey or maple syrup
- 1/2 cup rolled oats
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and grab your favorite baking dish.
- Lightly grease an 8×8-inch baking dish.
- Combine the cottage cheese, eggs, honey (or maple syrup), vanilla extract, baking powder, and salt in a large mixing bowl. Mix well.
- Gently fold in the rolled oats and mixed berries.
- Pour the mixture into your prepared baking dish, spreading it evenly.
- Sprinkle a few extra berries on top (optional).
- Bake for 30-35 minutes or until the edges are golden and the center is set.
- Cool for 10 minutes before serving.
Notes
