Ingredients

  • 1 cup cottage cheese
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1/2 cup rolled oats
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grab your favorite baking dish.
  2. Lightly grease an 8×8-inch baking dish.
  3. Combine the cottage cheese, eggs, honey (or maple syrup), vanilla extract, baking powder, and salt in a large mixing bowl. Mix well.
  4. Gently fold in the rolled oats and mixed berries.
  5. Pour the mixture into your prepared baking dish, spreading it evenly.
  6. Sprinkle a few extra berries on top (optional).
  7. Bake for 30-35 minutes or until the edges are golden and the center is set.
  8. Cool for 10 minutes before serving.
