Ingredients
2 lbs hot breakfast sausage
2 green bell peppers, diced
2 red bell peppers, diced
2 yellow onions, diced
12 oz baby spinach
16 large eggs
2 cups egg whites
2 tsp ground black pepper
1 tsp garlic powder
2 tsp mineral salt (or pink Himalayan salt)
1 tsp smoked paprika (flavor boost)
½ tsp red chili flakes (optional heat)
1½ cups shredded pepper jack cheese
1 cup shredded sharp cheddar cheese (adds depth & richness)
Optional: chopped fresh herbs (chives, parsley) for garnish
Instructions
In a large skillet, brown the sausage until fully cooked. Remove and set aside.
In the same pan, sauté onions and peppers for 4–5 minutes until soft. Add spinach and cook until wilted.
In a large bowl, whisk together eggs, egg whites, salt, pepper, garlic powder, paprika, and chili flakes.
Stir in sautéed veggies and sausage. Fold in cheeses.
Pour into baking dish and spread evenly.
Bake for 30–35 minutes or until center is set and top is golden.
Cool for 5–10 minutes before slicing. Garnish with herbs if desired.
