Description

Delicious and easy-to-make Teriyaki Chicken Meatballs, packed with savory and sweet flavors, perfect for a quick weeknight dinner.


Ingredients

  • 1 lb ground chicken
  • 1/4 cup breadcrumbs
  • 1/4 cup green onions, chopped
  • 1 egg
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger, grated
  • Salt and pepper, to taste
  • Sesame seeds, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Mix the ground chicken, breadcrumbs, green onions, garlic, egg, and ginger in a mixing bowl.
  3. Season with soy sauce, honey, rice vinegar, sesame oil, salt, and pepper.
  4. Shape the mixture into golf ball-sized meatballs.
  5. Bake for 20 minutes or until golden and cooked through.
  6. Make the teriyaki glaze by simmering soy sauce, remaining honey, and ginger in a saucepan for 5-7 minutes.
  7. Toss the baked meatballs in the glaze.
  8. Garnish with sesame seeds and serve.

Notes

For a vegetarian version, substitute ground chicken with plant-based meat and use a flax egg. Serve with rice or quinoa.
