Ingredients

- 2 medium Cucumbers
- 8 oz Fresh Mozzarella cheese
- 1 cup Cherry tomatoes
- 1/2 Red onion
- 1/4 cup Basil leaves
- 3 tbsp Olive oil
- 1 tbsp Balsamic vinegar
- Salt to taste
- Pepper to taste
Instructions
- Prep the vegetables: Wash cucumbers and cherry tomatoes, slice cucumbers into thin rounds about 1/4-inch thick.
- Dice the mozzarella into bite-sized chunks.
- Chop the cherry tomatoes and place them in a large mixing bowl.
- Slice the red onion into thin slices.
- Toss in the basil leaves, tearing them into smaller pieces.
- Mix up the dressing in a small bowl: whisk olive oil and balsamic vinegar with salt and pepper.
- Combine everything in a large bowl, tossing gently to coat.
- Serve it up in a serving bowl, garnishing as desired.
