Ingredients

  • 2 medium Cucumbers
  • 8 oz Fresh Mozzarella cheese
  • 1 cup Cherry tomatoes
  • 1/2 Red onion
  • 1/4 cup Basil leaves
  • 3 tbsp Olive oil
  • 1 tbsp Balsamic vinegar
  • Salt to taste
  • Pepper to taste

Instructions

  1. Prep the vegetables: Wash cucumbers and cherry tomatoes, slice cucumbers into thin rounds about 1/4-inch thick.
  2. Dice the mozzarella into bite-sized chunks.
  3. Chop the cherry tomatoes and place them in a large mixing bowl.
  4. Slice the red onion into thin slices.
  5. Toss in the basil leaves, tearing them into smaller pieces.
  6. Mix up the dressing in a small bowl: whisk olive oil and balsamic vinegar with salt and pepper.
  7. Combine everything in a large bowl, tossing gently to coat.
  8. Serve it up in a serving bowl, garnishing as desired.
