Ingredients

  • 8 oz spaghetti
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or 2 tablespoons homemade)
  • 1 (10 oz) can diced tomatoes with green chilies (like Rotel)
  • 1/2 cup tomato sauce
  • 2 cups water or beef broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • Salt and pepper to taste
  • Fresh cilantro or green onions, chopped (for garnish)

Instructions

  1. In a large skillet or pot, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it up as it cooks.
  2. Add diced onion and garlic, cooking for 2–3 minutes until softened.
  3. Stir in taco seasoning, diced tomatoes with green chilies, tomato sauce, and water or broth.
  4. Break spaghetti in half and add it to the pot. Stir to combine and ensure the pasta is submerged.
  5. Bring to a boil, then reduce heat, cover, and simmer for about 12-15 minutes or until pasta is cooked, stirring occasionally.
  6. Once the pasta is cooked and most of the liquid is absorbed, stir in both cheeses until melted and creamy.
  7. Season with salt and pepper to taste. Garnish with chopped cilantro or green onions before serving.
