Description

Ingredients

  • 2 medium sweet potatoes, peeled & cubed
  • 2 apples, diced (Honeycrisp or Gala work well)
  • 1 medium onion, diced
  • 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
  • 1/2 tsp ground cinnamon
  • Salt & pepper, to taste

Instructions

  1. Heat olive oil or butter in a large skillet over medium heat.
  2. Add cubed sweet potatoes and cook for 8–10 minutes, stirring occasionally, until they start to soften.
  3. Stir in diced onion and cook for an additional 5 minutes.
  4. Add diced apples, thyme, cinnamon, salt, and pepper. Stir well to combine.
  5. Continue cooking for 5–7 minutes, or until sweet potatoes are tender and apples are slightly caramelized.
  6. Adjust seasoning to taste and serve warm.
