- 2 medium sweet potatoes, peeled & cubed
- 2 apples, diced (Honeycrisp or Gala work well)
- 1 medium onion, diced
- 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
- 1/2 tsp ground cinnamon
- Salt & pepper, to taste
Instructions
- Heat olive oil or butter in a large skillet over medium heat.
- Add cubed sweet potatoes and cook for 8–10 minutes, stirring occasionally, until they start to soften.
- Stir in diced onion and cook for an additional 5 minutes.
- Add diced apples, thyme, cinnamon, salt, and pepper. Stir well to combine.
- Continue cooking for 5–7 minutes, or until sweet potatoes are tender and apples are slightly caramelized.
- Adjust seasoning to taste and serve warm.

- For a savory twist, add cooked bacon or sausage.
- Top with fried or poached eggs for a complete breakfast.
