Description

Delightful cupcakes adorned with sweet daisy designs, perfect for any celebration.


Ingredients

  • 140 ml Buttermilk
  • 120 g Soft Unsalted Butter
  • 150 g Granulated Sugar
  • 2 Eggs
  • 1 tbsp Vanilla Extract
  • 160 g All-Purpose Flour
  • 20 g Corn Starch
  • 1 tsp Baking Powder
  • ½ tsp Baking Soda
  • 1 Pinch Salt
  • 160 g Cream Cheese (room temperature for one hour)
  • 100 g Soft Unsalted Butter
  • 300 g Icing Sugar
  • 1 tsp Vanilla Extract
  • Yellow and Orange Food Coloring

Instructions

  1. Preheat your oven to 180°C (350°F). Line a cupcake tin with cute cupcake liners.
  2. Mix the dry ingredients: whisk together all-purpose flour, corn starch, baking powder, baking soda, and salt.
  3. Cream the butter and sugar in a large mixing bowl until light and fluffy.
  4. Add the eggs and vanilla extract, beating well until combined.
  5. Alternate adding dry and wet ingredients, starting and ending with the dry ingredients.
  6. Fill each cupcake liner about two-thirds full with batter.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack.
  9. Make the frosting by beating cream cheese and soft butter until smooth. Gradually add icing sugar and then vanilla extract.
  10. Frost the cupcakes creatively with yellow and orange frosting to resemble daisies.

Notes

Try adding lemon zest for a refreshing twist. Freezer-friendly without frosting for up to three months.
