- 1/4 cup coconut oil, melted
- 1/4 cup sugar-free sweetener (like erythritol or stevia)
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon baking soda
- 1/4 cup unsweetened cocoa powder (optional)
- Pinch of salt
- 1/4 cup chopped nuts or sugar-free chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare an 8×8 inch baking dish.
- Mix the almond flour, baking soda, cocoa powder (if using), and salt in a bowl.
- Melt the coconut oil gently and let it cool slightly.
- Combine the melted coconut oil, sugar-free sweetener, vanilla extract, and optional ingredients in another bowl.
- Stir the wet ingredients into the dry mixture until well combined.
- Pour the batter into the prepared baking dish and spread evenly.
- Bake for 18-22 minutes until edges pull away from the sides.
- Cool for about 10 minutes before slicing into bars.
