Ingredients
4 bell peppers, halved and seeds removed
1 lb ground beef
1 cup cooked rice (white or brown)
1 cup tomato sauce
1 tsp garlic powder
1 tsp onion powder
½ tsp salt
½ tsp black pepper
1 tsp Italian seasoning (optional)
1–1½ cups shredded cheese (cheddar or mozzarella)
Instructions
Preheat oven to 375°F (190°C).
Brown ground beef in a skillet over medium heat. Drain any excess fat.
Stir in cooked rice, tomato sauce, and all seasonings. Let simmer for 2–3 minutes.
Arrange pepper halves in a baking dish. Spoon the meat mixture into each half.
Top generously with shredded cheese.
Cover with foil and bake for 25 minutes. Remove foil and bake another 10 minutes until bubbly and golden.
Let cool slightly before serving.
