- 1 cup sweet corn, grilled or canned
- 1 large cucumber, diced

- ½ cup mayonnaise
- 2 tablespoons Greek yogurt

- 1 tablespoon cilantro, chopped
- 1 teaspoon smoked paprika
- 1 teaspoon salt (to taste)

Instructions
- Prepare the chicken by cubing it or grilling it until cooked through.
- Grill the corn until charred, then allow to cool before cutting off the kernels.
- Chop the cucumber, red onion, and cilantro while the corn is grilling.
- Assemble the salad by combining chicken, corn, cucumber, onion, and cilantro in a large bowl.
- Whisk together mayonnaise, Greek yogurt, lime juice, smoked paprika, salt, and black pepper in a separate bowl to create the dressing.
- Mix the dressing into the salad and toss gently to combine.
- Chill in the fridge for at least 30 minutes before serving.
Notes
