- 2 cups corn kernels (fresh or frozen)

- 2 cups cooked rice (white, brown, or cauliflower rice)
- 1/2 cup diced red bell pepper
- 1/4 cup chopped cilantro
- 1/4 cup red onion, finely chopped
- 1 avocado, sliced
- 1 lime, cut into wedges
- 1/3 cup crumbled cotija or feta cheese (optional)
- For sauce: 1/2 cup Greek yogurt or sour cream, 1 tbsp mayo, 1 tsp lime juice, 1/2 tsp chili powder, pinch of salt
Instructions
- In a bowl, toss chicken with olive oil, smoked paprika, chili powder, cumin, salt, and pepper until evenly coated.
- Heat a skillet or grill pan over medium‑high heat and cook chicken for 5–7 minutes, stirring occasionally, until cooked through and lightly charred. Remove and set aside.
- In the same pan, add corn kernels and cook until slightly charred, about 5 minutes. Add diced bell pepper and cook 2–3 more minutes.
- In a small bowl, mix Greek yogurt, mayo, lime juice, chili powder, and salt to make the creamy sauce; set aside.
- Divide cooked rice among serving bowls.
- Top each bowl with grilled chicken, charred corn and peppers, red onion, avocado slices, and cilantro.
- Drizzle the creamy sauce over the bowls and sprinkle with cotija or feta cheese if using.
- Squeeze fresh lime over each bowl before serving and enjoy!
