Description

Delicious, buttery Strawberry Shortcake Bars layered with fresh strawberries and whipped cream, perfect for summer gatherings.


Ingredients

  • 4 cups Strawberries, fresh and juicy
  • ½ cup Granulated Sugar
  • 2 cups All-Purpose Flour
  • 1 tablespoon Baking Powder
  • ½ teaspoon Salt
  • ½ cup Unsalted Butter, melted
  • ½ cup Milk
  • 1 cup Heavy Cream
  • 1 teaspoon Vanilla Extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the strawberries by rinsing, removing stems, and slicing them. Toss with ¼ cup sugar and set aside.
  3. Make the shortcake base: mix flour, baking powder, salt, and remaining sugar in a bowl. In another bowl, combine melted butter and milk, then mix into dry ingredients.
  4. Pour the mixture into a lined 9×13 inch baking dish and bake for 25-30 minutes.
  5. While the shortcake cools, whip cream and vanilla until soft peaks form.
  6. Once cool, slice the shortcake into bars and layer with strawberries and whipped cream.
  7. Serve garnished with additional strawberry slices or mint leaves.

Notes

For a vegan version, substitute butter with coconut oil, milk with almond or oat milk, and heavy cream with coconut cream.
