Delicious, buttery Strawberry Shortcake Bars layered with fresh strawberries and whipped cream, perfect for summer gatherings.

- 4 cups Strawberries, fresh and juicy
- ½ cup Granulated Sugar
- 2 cups All-Purpose Flour
- 1 tablespoon Baking Powder
- ½ teaspoon Salt
- ½ cup Unsalted Butter, melted
- ½ cup Milk
- 1 cup Heavy Cream
- 1 teaspoon Vanilla Extract
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare the strawberries by rinsing, removing stems, and slicing them. Toss with ¼ cup sugar and set aside.
- Make the shortcake base: mix flour, baking powder, salt, and remaining sugar in a bowl. In another bowl, combine melted butter and milk, then mix into dry ingredients.
- Pour the mixture into a lined 9×13 inch baking dish and bake for 25-30 minutes.
- While the shortcake cools, whip cream and vanilla until soft peaks form.
- Once cool, slice the shortcake into bars and layer with strawberries and whipped cream.
- Serve garnished with additional strawberry slices or mint leaves.
Notes
For a vegan version, substitute butter with coconut oil, milk with almond or oat milk, and heavy cream with coconut cream.
