  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2/3 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract (for batter)
  • 1 1/4 cups diced fresh strawberries
  • 1 tablespoon all-purpose flour (for tossing strawberries)
  • 1/3 cup all-purpose flour (for crumb topping)
  • 3 tablespoons granulated sugar (for crumb topping)
  • 3 tablespoons unsalted butter, melted

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare your muffin tin with liners.
  2. Mix the cream cheese filling by combining cream cheese, 2 tablespoons sugar, egg yolk, and vanilla extract.
  3. Combine the dry ingredients: flour, sugar, baking powder, baking soda, and salt in a large bowl.
  4. Beat the wet ingredients: eggs, milk, vegetable oil, and vanilla extract until well combined.
  5. Combine the wet mixture with the dry mix, stirring until just combined.
  6. Toss the strawberries with all-purpose flour, then gently fold into the batter.
  7. Fill the muffin liners with batter, adding a teaspoon of cream cheese filling on top of each.
  8. Prepare the crumb topping by mixing flour, sugar, and melted butter until crumbly, then sprinkle over the muffins.
  9. Bake for 20-25 minutes or until a toothpick comes out clean.
  10. Cool in the pan for 5 minutes before transferring to a wire rack.

Notes

These muffins freeze beautifully. Allow them to cool completely and store in an airtight container.
