Description

Strawberry Cream Cheese Bread is a soft, moist quick bread swirled with sweet cream cheese and bursting with fresh strawberry flavor. It’s rich yet tender, lightly sweet, and perfect for breakfast, snacking, or dessert.

  • For the bread:
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream or Greek yogurt
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh strawberries, chopped
  • 1 tbsp flour (for tossing strawberries)
  • For the cream cheese swirl:
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, mixing well.
  4. Mix in sour cream and vanilla extract.
  5. Gradually add dry ingredients to the wet ingredients until just combined.
  6. Toss chopped strawberries with 1 tbsp flour and gently fold into the batter.
  7. In a separate bowl, beat cream cheese, sugar, egg, and vanilla until smooth.
  8. Pour half the bread batter into the prepared pan. Spoon half of the cream cheese mixture on top and gently swirl.
  9. Add remaining batter, then top with remaining cream cheese mixture and swirl again.
  10. Bake for 55–65 minutes, covering loosely with foil if browning too quickly.
  11. Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

  • Frozen strawberries can be used—thaw, drain, and pat dry first.
  • Do not overmix to keep the bread tender.
  • Let bread cool fully for clean slices.
  • Add lemon zest for a bright flavor boost.
  • Store tightly wrapped to maintain moisture.
