Ingredients

2 cups fresh or frozen peas (thawed if frozen)

⅓ cup crumbled feta cheese

2 tbsp fresh mint, finely chopped

Zest of 1 lemon

1½ tbsp olive oil

1 tbsp fresh lemon juice

Salt and black pepper, to taste

Optional: thinly sliced scallions or a handful of arugula


Instructions
