- 1 (8-oz.) block feta cheese
- 1 (12-16 oz.) bag frozen spinach, thawed
- 1 cup plain whole-milk Greek yogurt
- 1/2 cup mayonnaise
- 2 garlic cloves, grated
- A generous pinch of crushed red pepper flakes
- 1 cup sliced pepperoncini peppers, roughly chopped
- 1 1/2 cups grated fresh mozzarella cheese, divided
- Non-stick cooking spray (or oil for greasing pan)
- For serving: pita chips, crostini, seeded crackers, or colorful raw veggies
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking dish.
- Crumble the feta cheese into a mixing bowl and add the thawed spinach, Greek yogurt, and mayonnaise.
- Grate the garlic into the mixture and add crushed red pepper flakes and chopped pepperoncini, mixing well.
- Transfer the mixture into the baking dish and sprinkle 1 cup of grated mozzarella on top.
- Bake for 25-30 minutes or until bubbly and golden.
- Let it cool for a few minutes, then serve warm with dippers.
Notes
Consider roasting the garlic for a sweeter flavor. You can assemble ahead of time and refrigerate before baking.
