Ingredients

  • 1 (12-16 oz.) bag frozen spinach, thawed
  • 1 cup plain whole-milk Greek yogurt
  • 1/2 cup mayonnaise
  • 2 garlic cloves, grated
  • A generous pinch of crushed red pepper flakes
  • 1 cup sliced pepperoncini peppers, roughly chopped
  • 1 1/2 cups grated fresh mozzarella cheese, divided
  • Non-stick cooking spray (or oil for greasing pan)
  • For serving: pita chips, crostini, seeded crackers, or colorful raw veggies

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. Crumble the feta cheese into a mixing bowl and add the thawed spinach, Greek yogurt, and mayonnaise.
  3. Grate the garlic into the mixture and add crushed red pepper flakes and chopped pepperoncini, mixing well.
  4. Transfer the mixture into the baking dish and sprinkle 1 cup of grated mozzarella on top.
  5. Bake for 25-30 minutes or until bubbly and golden.
  6. Let it cool for a few minutes, then serve warm with dippers.

Notes

Consider roasting the garlic for a sweeter flavor. You can assemble ahead of time and refrigerate before baking.
