Ingredients
2 cups cooked chicken, diced
½ cup jalapeños, diced (fresh for heat, pickled for tang)
½ cup corn (fresh, canned, or thawed from frozen)
½ cup red onion, finely chopped
¼ cup cilantro, chopped
¼ cup lime juice
¼ cup mayonnaise
Salt and pepper to taste
Instructions
