Ingredients
2 ¼ cups all-purpose flour
2 tsp ground ginger
1 tsp cinnamon
½ tsp ground cardamom
½ tsp ground cloves
¼ tsp black pepper
¼ tsp ground nutmeg
1 tsp baking soda
¼ tsp salt
¾ cup unsalted butter, softened
½ cup brown sugar
¼ cup granulated sugar (plus extra for rolling)
1 large egg
¼ cup molasses
Instructions
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a bowl, whisk together flour, spices, baking soda, and salt.
In a separate bowl, cream butter and sugars until light and fluffy. Beat in egg, molasses, and vanilla.
Gradually add dry ingredients to the wet until combined. Chill dough for 30 minutes if time allows.
Scoop dough into tablespoon-sized balls and roll in sugar.
Place on baking sheet 2 inches apart. Bake 9–11 minutes until cracked and set at edges.
Let cool on sheet 5 minutes, then transfer to a wire rack.
