Ingredients
For the Chicken Marinade:
2 lb boneless chicken breast or thighs
4 tbsp whole milk yogurt
2 tbsp tomato paste
2 tbsp lemon juice
Salt to taste
1 tbsp black pepper
1 tsp red chili powder
1 tbsp garlic powder
1 tbsp Cajun seasoning
1 tbsp onion powder

Creamy Yogurt Sauce:
1 cup plain yogurt
2 tbsp mayonnaise
3 tbsp hot sauce
Salt to taste
1 tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tbsp chopped parsley
Fresh Veggies:
1 red onion, sliced
1 large tomato, diced
1 large cucumber, diced
Salt to taste
1 tsp black pepper
1 tbsp lemon juice
Instructions
Mix chicken with marinade ingredients. Let rest for 30 minutes to 2 hours.
Grill or pan-sear chicken over medium-high heat until fully cooked. Let rest and slice.
In a bowl, mix all yogurt sauce ingredients until smooth.
Toss chopped veggies with lemon juice, salt, and pepper.
Assemble bowls with chicken, veggies, and a generous drizzle of yogurt sauce. Serve with pita, rice, or greens.
