Ingredients
½ cup (113g) unsalted butter, softened
¾ cup (150g) packed light or dark brown sugar
1 large egg, room temp
1 tsp vanilla extract
1 cup (125g) all-purpose flour
1 cup (120g) graham cracker crumbs (about 8 full sheets)
½ tsp baking powder
¼ tsp salt
1 cup (180g) semi-sweet chocolate chips
1 heaping cup marshmallow crème (store-bought or homemade)
Instructions
Preheat oven to 350°F (177°C). Grease or line an 8×8-inch baking pan.
Cream butter and sugar in a large bowl until light and fluffy. Mix in the egg and vanilla.
Combine dry ingredients (flour, graham crumbs, baking powder, salt) and stir into the wet mixture until combined.
Press two-thirds of the dough into the pan. Spread marshmallow crème on top (wetting your spoon helps spread it easier).
Sprinkle chocolate chips, then gently dollop remaining dough on top in clumps—don’t worry about covering completely.
Bake for 25–30 minutes or until golden brown and slightly firm in the center.
Cool completely before cutting into bars. (Trust us—it’s worth the wait.)
