Ingredients

- 1 pound ground beef
- 1 tablespoon taco seasoning
- 2 cups shredded cheese (Cheddar, Monterey Jack or pepper jack)
- 4 large flour tortillas
- Chopped lettuce, diced tomatoes, pickles, onion (as toppings)
- 2 tablespoons olive oil
Instructions
- Brown your beef: In a large skillet over medium heat, add the ground beef and cook for about 5-7 minutes until browned.
- Add seasoning: Stir in the taco seasoning and a splash of water, letting it simmer for a couple of minutes.
- Prepare tortillas: Sprinkle about ½ cup of cheese on one half of a large tortilla. Add the beef mixture and more cheese, then fold.
- Cook the quesadillas: Heat olive oil in the skillet and cook the folded quesadilla for 4-5 minutes on each side until golden brown.
- Cut and serve: Transfer to a cutting board and slice into wedges. Enjoy immediately.
Notes
For added crunch, brush the outside of the tortilla with olive oil before cooking. Feel free to customize toppings as desired.
