- 3 (28 oz) cans crushed tomatoes
- 2 (6 oz) cans tomato paste
- 2 cups beef broth
- 3 tablespoons chili powder
- 1 tablespoon smoked paprika
- 2 teaspoons ground cumin
- 1 teaspoon oregano
- 1 teaspoon cayenne pepper (optional)
- 2 teaspoons salt (adjust to taste)
- 1 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat.
- Add onions, garlic, and bell peppers to the skillet. Cook until softened, about 5 minutes.
- Transfer meat and vegetable mixture to a large slow cooker.
- Add kidney beans, black beans, crushed tomatoes, tomato paste, beef broth, chili powder, smoked paprika, cumin, oregano, cayenne, salt, and black pepper.
- Stir well to combine, cover, and cook on LOW for 6–8 hours or HIGH for 3–4 hours.
- Taste and adjust seasonings before serving.
- Serve with shredded cheese, sour cream, jalapeños, or cornbread on the side.
