Description

A creamy garlic dip made with mashed potatoes and olive oil, perfect for spreading on bread or pairing with veggies.


Ingredients

  • 2 cups mashed potatoes
  • 45 cloves garlic, minced
  • 1/2 cup olive oil
  • 2 tablespoons lemon juice
  • Salt to taste

Instructions

  1. Prepare the mashed potatoes by peeling and chopping them into chunks. Boil until fork-tender, about 15-20 minutes. Drain and mash until creamy.
  2. Add the minced garlic to the warm mashed potatoes. Mix well.
  3. Drizzle in the olive oil while stirring until fully incorporated.
  4. Squeeze in the lemon juice and adjust salt to taste.
  5. Serve in a bowl and drizzle with more olive oil if desired.

Notes

If the dip is too thick, mix in a splash of warm water or more olive oil. For an extra touch, garnish with paprika or parsley.
