Ingredients

- 2 cups mashed potatoes
- 4–5 cloves garlic, minced
- 1/2 cup olive oil
- 2 tablespoons lemon juice
- Salt to taste
Instructions
- Prepare the mashed potatoes by peeling and chopping them into chunks. Boil until fork-tender, about 15-20 minutes. Drain and mash until creamy.
- Add the minced garlic to the warm mashed potatoes. Mix well.
- Drizzle in the olive oil while stirring until fully incorporated.
- Squeeze in the lemon juice and adjust salt to taste.
- Serve in a bowl and drizzle with more olive oil if desired.
Notes
If the dip is too thick, mix in a splash of warm water or more olive oil. For an extra touch, garnish with paprika or parsley.
