- Steak (Ribeye or Sirloin)
- ½ cup Unsalted Butter (softened)
- 4 cloves Garlic (minced)
- ¼ cup Fresh Parsley (chopped)
- 2 tablespoons Fresh Chives (chopped)
- Zest of 1 Lemon
- 1 tablespoon Lemon Juice
- 1 teaspoon Paprika
- Salt (to taste)
- Pepper (to taste)
Instructions
- In a bowl, combine ½ cup of softened unsalted butter, 4 cloves minced garlic, ¼ cup chopped fresh parsley, 2 tablespoons chopped fresh chives, the zest of one lemon, and a tablespoon of lemon juice. Season with salt, pepper, and 1 teaspoon paprika. Mix until well combined.
- Take your steak out of the refrigerator about 30 minutes before cooking to bring it to room temperature. Season generously with salt and pepper.
- Preheat your grill to high heat or a cast-iron skillet over medium-high heat. If using a skillet, add a tablespoon of oil with a high smoke point.
- Place your steak on the grill or skillet. For medium-rare, cook for about 4-5 minutes on one side without moving it.
- Once the first side has developed a nice sear, flip it over and continue cooking for another 3-4 minutes (for medium-rare). In the last minute of cooking, add a dollop of your cowboy butter on top of the steak.
- Once cooked to your desired doneness, remove the steak from the heat and let it rest on a cutting board for about 5-10 minutes.
- Slice against the grain into thick pieces and drizzle any melted cowboy butter over the top before serving.
Notes
For an extra kick, add a pinch of cayenne or crushed red pepper flakes to the cowboy butter.
