A delightful blend of classic shrimp scampi flavors and hearty pasta, all baked to bubbly perfection.
Ingredients

- 8 oz Pasta (short pasta like penne, fusilli, or shells)
- 1 lb Shrimp (peeled and deveined)
- 4 cloves Garlic (minced)
- 4 tablespoons Butter
- 2 tablespoons Lemon juice (fresh)
- 1/2 cup Dry white wine
- 1 cup Parmesan cheese (grated)
- 1/4 cup Parsley (fresh, chopped)
- 1 teaspoon Red pepper flakes
- Salt and black pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Boil a large pot of salted water and cook pasta until al dente, about 1-2 minutes less than package instructions.
- Drain the pasta and reserve a cup of pasta water.
- Sauté the shrimp in 2 tablespoons of melted butter with garlic, salt, pepper, and red pepper flakes until pink, about 3-4 minutes.
- Remove the shrimp and make the sauce by adding white wine to the skillet, simmering for about 2 minutes.
- Stir in the remaining butter and lemon juice.
- Combine the cooked pasta, shrimp, and sauce in a bowl, adding reserved pasta water if needed, along with grated parmesan and parsley.
- Transfer mixture to a greased 9×13 inch baking dish.
- Top with more parmesan cheese and drizzle with olive oil if desired.
- Bake for 20-25 minutes until bubbly and golden, and broil for the last few minutes if desired.
- Garnish with remaining parsley and serve warm.
Notes
This dish can be made ahead of time and refrigerated before baking. Reheat thoroughly before serving.
