For the Bowl:

1/2 lb shrimp, peeled and deveined

1 teaspoon sesame oil or olive oil

1 cup cooked brown rice

1/2 avocado, sliced

1/4 cup shredded carrots

1/4 cup edamame (optional)

Sesame seeds and green onions for topping

Pickled Cucumber Salad:

1/2 cup cucumber, thinly sliced

1 tablespoon rice vinegar

1/4 teaspoon salt

Pinch of sugar

Honey Soy Dressing:

1 tablespoon soy sauce

1 teaspoon honey

1 teaspoon rice vinegar

1/2 teaspoon sesame oil


Instructions

Mix cucumber with vinegar, salt, and sugar. Let sit while prepping the rest.

In a skillet, heat sesame oil over medium heat. Cook shrimp 2–3 minutes per side until pink and cooked through.

Whisk together honey soy dressing ingredients in a small bowl.

Assemble bowl with rice, shrimp, cucumber salad, avocado, carrots, and edamame. Drizzle with dressing.

Top with sesame seeds and green onions. Serve immediately.
