Ingredients
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
2 cups frozen mixed vegetables (peas, carrots, corn)
2 tbsp tomato paste
1 tbsp Worcestershire sauce
1 cup beef broth
2 cups mashed potatoes (prepared or homemade)
Salt and pepper to taste
1/2 tsp dried thyme
1 tbsp olive oil or butter
Instructions
Preheat oven to 375°F (190°C).
In a skillet, heat oil and sauté onion and garlic until softened.
Add ground beef, cook until browned. Drain fat.
Stir in tomato paste, Worcestershire, thyme, salt, pepper, and broth. Simmer 5–7 min.
Add frozen vegetables, cook 2 more minutes.
Transfer meat mixture to a baking dish. Spread mashed potatoes evenly on top.
Bake uncovered for 20–25 minutes until golden and bubbly.
Let cool slightly before serving.
