Ingredients

  • 1 head cauliflower, cut into florets (about 4 cups)
  • 1 1/3 lb ground beef (or ground lamb for more traditional flavor)
  • 1/2 medium onion, chopped
  • 1 garlic clove, minced
  • 8 oz mushrooms, sliced (optional)
  • 1 cup frozen green beans (or mixed low‑carb vegetables)
  • 1 cup beef broth
  • 1/2 cup tomato paste
  • 2 tbsp Worcestershire sauce
  • 1/4 cup Greek yogurt or sour cream
  • 1 large egg
  • 1 cup shredded cheddar cheese (optional)
  • Salt and pepper to taste
  • Olive oil or cooking spray for sautéing

Instructions

  1. Preheat oven to 350°F (175°C) and coat a baking dish or oven‑safe bowls with cooking spray.
  2. Steam cauliflower florets until very tender, about 12–15 minutes, then drain excess water.
  3. While cauliflower cooks, heat a skillet over medium heat and sauté onion and garlic until soft.
  4. Add ground beef to the skillet, season with salt and pepper, and cook until browned. Drain excess fat.
  5. Stir in mushrooms and green beans and cook until vegetables are tender.
  6. Add beef broth, tomato paste, and Worcestershire sauce; simmer until slightly thickened.
  7. Transfer cauliflower to a food processor; add Greek yogurt, egg, some shredded cheese, salt and pepper, and blend until smooth.
  8. Divide the meat mixture into bowls or the baking dish, top with creamy cauliflower mash, and sprinkle remaining cheese on top.
  9. Bake for 30–35 minutes until heated through and the top is lightly browned.
  10. Serve warm, garnished with fresh herbs if desired.

Notes

  • You can use ground turkey or lamb instead of beef.
  • For extra creaminess, add a bit of butter or heavy cream to the cauliflower mash.
  • Add herbs like rosemary or thyme to the meat filling for more flavor.
