Description

A quick and delightful sheet pan meal featuring chicken, vibrant veggies, and a creamy herby ranch, all served in warm pitas.


Ingredients

  • 1.5 lbs Boneless, skinless chicken breasts
  • 2 tbsp Olive oil
  • 1 tsp Smoked paprika
  • 1 tsp Garlic powder
  • Salt and black pepper to taste
  • 1 Red bell pepper, chopped
  • 1 Yellow bell pepper, chopped
  • 1 Green bell pepper, chopped
  • 1 Red onion, chopped
  • 1 cup Cherry tomatoes, halved
  • 1 cup Greek yogurt
  • ½ cup Buttermilk
  • 2 tbsp Mixed fresh herbs (dill, parsley, chives)
  • 1 clove Garlic, minced
  • Whole wheat or pita bread for serving
  • Leafy greens (spinach or arugula) for serving

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Combine olive oil, smoked paprika, garlic powder, salt, and pepper in a bowl, then coat the chicken breasts.
  3. Chop the bell peppers, red onion, and cherry tomatoes, then drizzle with olive oil, salt, and pepper.
  4. Place marinated chicken in the center of the baking sheet and surround with seasoned veggies.
  5. Bake in the oven for 20-25 minutes until chicken is 165°F (75°C).
  6. Mix Greek yogurt, buttermilk, herbs, and minced garlic in a bowl to prepare the herby ranch.
  7. Remove the baking sheet and let the chicken rest before slicing.
  8. Stuff the pitas with chicken, veggies, leafy greens, and a generous spoonful of herby ranch. Enjoy!
