A quick and delightful sheet pan meal featuring chicken, vibrant veggies, and a creamy herby ranch, all served in warm pitas.

- 1.5 lbs Boneless, skinless chicken breasts
- 2 tbsp Olive oil
- 1 tsp Smoked paprika
- 1 tsp Garlic powder
- Salt and black pepper to taste
- 1 Red bell pepper, chopped
- 1 Yellow bell pepper, chopped
- 1 Green bell pepper, chopped
- 1 Red onion, chopped
- 1 cup Cherry tomatoes, halved
- 1 cup Greek yogurt
- ½ cup Buttermilk
- 2 tbsp Mixed fresh herbs (dill, parsley, chives)
- 1 clove Garlic, minced
- Whole wheat or pita bread for serving
- Leafy greens (spinach or arugula) for serving
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Combine olive oil, smoked paprika, garlic powder, salt, and pepper in a bowl, then coat the chicken breasts.
- Chop the bell peppers, red onion, and cherry tomatoes, then drizzle with olive oil, salt, and pepper.
- Place marinated chicken in the center of the baking sheet and surround with seasoned veggies.
- Bake in the oven for 20-25 minutes until chicken is 165°F (75°C).
- Mix Greek yogurt, buttermilk, herbs, and minced garlic in a bowl to prepare the herby ranch.
- Remove the baking sheet and let the chicken rest before slicing.
- Stuff the pitas with chicken, veggies, leafy greens, and a generous spoonful of herby ranch. Enjoy!
