Ingredients

For the chicken:

1 lb boneless, skinless chicken breasts

2 tbsp soy sauce

1 tbsp sesame oil

1 tbsp rice vinegar

1 tsp grated ginger

1 garlic clove, minced

For the bowl:

2 cups cooked brown rice

1 cup shredded red or green cabbage

1/2 cup shredded carrots

1/2 cup sliced cucumbers

Optional: green onions, sesame seeds, lime wedges

Sesame-Ginger Drizzle:

2 tbsp soy sauce

1 tbsp honey or maple syrup

1 tbsp sesame oil

1 tsp grated fresh ginger

1 tsp rice vinegar

1 tsp sriracha (optional)


Instructions

Marinate chicken in soy sauce, sesame oil, vinegar, ginger, and garlic for at least 20 mins.

Grill or pan-sear chicken 5–7 minutes per side until cooked through. Slice.

Whisk all drizzle ingredients in a small bowl.

Build bowls with rice, cabbage, carrots, cucumbers, and chicken.

Drizzle with sesame-ginger sauce and top with green onions or sesame seeds.
